At illa Carlemany in Andorra, ice cream rules the summer!
In ice cream we have history, tradition and innovation. Refreshing and popular all over the world – thanks to the constant work of ice cream makers! – the variety of flavours and textures is just amazing. And actually, it is one of our favourite desserts all year round.
A little history
The origins of ice cream go back to ancient China, where they prepared mixtures of snow and sugar. Later, Arabian people invented ways to preserve ice and make cold drinks; and then in the Middle Ages, Europeans started to come up with versions of modern ice cream. Legend has it that in the 16th century ice cream was popular at the court of Queen Catherine de’ Medici in France. Then in the 18th century, with the invention of the ice cream maker and the use of dairy products and sugar, ice cream became widely popular.
Methods and flavours
Traditional ice cream making involves mixing ingredients such as milk, cream, sugar and flavourings, and churning them while chilling to prevent the formation of ice crystals and to achieve a creamy texture. Nowadays, many ice cream parlours use machines that blend the mixture while it cools to produce ice cream within a matter of minutes.
The work of master craftsmen and major industrial producers has allowed the product and production to evolve. Quantities are now made much more efficiently, adapted to the desires and tastes of consumers – lactose-free, vegetarian or vegan – and the range of flavours is endless: the classics, along with exotic fruits, nut flavours, coffee, caramel, and even shrimp or smoky flavours.
